This is what happens in the kitchen when mum is alone. She comes up a delicious Smokey braised dish with pork shoulder, preserved vegetables and dark soy sauce. I haven't had the chance to get mum to write down a recipe for me but I will. I think it's pretty similar to the other soy braising techniques but this is more savory, less sweet. Paired with some killer home-made chili sauce (spiked with grated ginger, garlic and sesame oil), this is a perfect partner with steamed rice or even rice
